I'm looking for a table in the database that holds the amount of times a portal is visited. Is there such a table?

Look under Admin, Site Log. This is useful only if you have the Site Log enabled. You do this on the Host Settings page.
However, I think that you will find it more useful to use Google Analytics to track your site's visitors. Look under Admin, Google Analytics to configure it.

One question about the Google Analytics Module, these sites are for a client, so the data needs to be protected. Is the modules data going to be safe?

I don't think that is a problem. The only thing that the site Admin needs to know is the Google Tracking code.
Your client would set up the Google Analytics account and obtain the Tracking Code from Google. You (or whomever administers the site) plugs in the Tracking Code on the Admin, Google Analytics page. Only those how have access to the Google Webmaster Tools for that account can see the data.

You said in host settings you can set the logging. Are these the settings and are they correct
In Host Settings>> Other Settings >> Site Log Storage - Database, Site Log Buffer - 1 Items, Site Log History - 100 Days, Enable Event Log Buffer? - Checked Yes
Are these the correct settings, or am I looking in the wrong place?

The Event Log is not the same as the site log, I don't usually enable that buffer.
Mind you that you don't need to configure the site log if you are using Google Analytics.
The site log is going to be a performance issue if lots of storage. If you are getting a lot of traffic, it might be better to store the site log in the file system rather than in the database. That might prevent problems with filling the database or otherwise causing performance issues.
