I don't know an easy way to do that, short of editing the ascs file that displays that information. Look at admin/Security/Register.aspx. But, you'll still need to provide a value for Display Name for every user. You can do this on the User Settings page. If you choose a default format for Display Name, it will appear on the Register Page but will not be editable.
